Mahi Mahi with Zesty Basil Sauce

I am a seafood purist. I still think there is nothing better than a good fillet of salmon with salt and pepper and a squeeze of lemon. Zesty basil sauce, however, is one of my favorites ways to spruce up a boring piece of fish. I use this for Mahi Mahi as well most other white fish like tilapia and flounder.

The recipe is from Paula Deen but I’m pretty sure I started making this sauce prior to her demise…but I’m not certain. So, this may be a politically incorrect fish, BUT in a whole new way.

The BEST Challah French Toast

In a past life, I would have loved to have been served sweet breakfast treats like French toast every morning. Now, I seldom crave such things and prefer a more savory breakfast. Somewhere, out of nowhere…. I got the inspiration to make an all-star breakfast which is something I never do. There’s something about preparing a meal after just waking up that’s not all that appealing to me–call me crazy! I don’t know how some people whip up breakfasts regularly on the weekend. It’s just not my thing which couldn’t be more clearer if you looked at the Recipes section of this blog and noticed the lack of breakfast foods I’ve made (especially ones that aren’t baked goods!)

Coffee Granita

Summer time is all about ice cream, frozen yogurt and anything sweet and cool to help beat the heat. And even though I love me some ice cream (even if my stomach doesn’t) I wanted to try something new. I realize I start a good number of my blog posts with “After I watched an Ina make….” and this one is no different, sadly. She whipped up her own coffee granita on the Barefoot Contessa and might have said her little catch phrase, “How easy is that?” and I might have maybe sat there on the couch captivated, nodding my head, answering her saying, “SO easy!” as the dog stared at me like I was a crazy person. Potato Skins

I LOVE appetizers. It’s a love that always gets me in trouble. I have big eyes and a small stomach and I cannot resist appetizers (and BREAD) before eating dinner. It’s real sad when I get all excited about a meal and can’t take more than a few bites because I’ve filled up so much on the first course.

That’s why it’s always a good idea to have an appetizer night in lieu of a real dinner once in a while. With my family, it usually consists of some frozen pigs in a blanket, mozzarella sticks and cheeses. But since I’ve been painfully aware that my beloved potato skins are all but gone from appetizer menus everywhere, I decided to make my own.

Cheesecake Brownies

If you want to see what these brownies should have looked like, click here. I messed this one up. Bad. They still tasted OK in the end, but when you forget to add half of the ingredients and only realize it midway through, “ok” tasting brownies are better than nothing…

I was really excited about this recipe since The Food Network website lauded these as a healthier dessert option and it got great reviews. If I hadn’t forgotten to add the melted chocolate, butter and canola oil that was sitting in a bowl on the other side of the kitchen then maybe I’d be able to agree with the reviewers!
